Drunk Chickens

Ingredients:

4 Cornish Hens
6 tbsp. Simply Scrumptious Seasonings BBQ Rub
4 Cans Coors Light (must be a narrow beer can to fit inside the hen)

Directions:

  1. Rinse the chickens inside and out and pat to dry.
  2. Rub the chickens inside and out with the BBQ Rub.
  3. Open the beer cans and pour ½ of the can out (or you can drink it!).
  4. Place the cans inside the opening of the chicken.
  5. Wrap the chicken’s wings and feet with tin foil so they do not burn.
  6. Place on medium hot grill and grill for 25-30 minutes.

Scrumptious BBQ Brisket

Ingredients:

Beef Brisket 4 to 5lbs (fat trimmed to ¼ in thickness)
½ cup BBQ Rub
2 cups wood chips
Heavy duty Aluminum foil

Directions:

  1. Apply Rub liberally to all sides of the meat. Wrap the meat tightly in plastic wrap and refrigerate at least 2 hours and up to 2 days. One hour prior to cooking remove the brisket from the refrigerator and let it come to room temperature.
  2. Soak the wood chips for 15 minutes and make a foil tray to hold the chips. Turn all burners to high or if using coals allow the coals to become gray, place the wood chips in the aluminum tray, close the lid and allow them to start smoking.
  3. Turn the temperature down to medium, add the brisket fat side up and cover for 2 hours. The temperature of the grill should stay a constant 275 degrees.
  4. After two hours take the meat inside and preheat the oven to 300 degrees. Wrap the entire brisket in tinfoil and place in a jelly roll pan. Bake until fork tender 3 to 3 1/2 hours.
  5. Remove from oven and allow resting for 30 minutes. Slice against the grain into long thin slices.
  6. This seems like a long process but it is easy, delicious and well worth the wait.

Three Bean Turkey Chili

Ingredients:

1 lb lean ground turkey
1 large Vidalia onion, chopped
2 bell peppers, chopped
1 jalapeño pepper, chopped seeds removed
1/2 cup Simply Scrumptious BBQ Rub
1 beer (light ale)
1 /28 oz can crushed tomatoes
1 /16 oz can of kidney beans
1 /16 oz can of black beans
1 /16 oz can of navy beans

Directions:

  1. In a large pot, brown the ground turkey. Add the Simply Scrumptious seasoning, onions, bell peppers and jalapeño pepper.
  2. Add the beer to the mixture and allow it to cook for 10 minutes.
  3. Add the tomatoes, and all the beans. Give it a good stir and allow it to simmer for at least 30 minutes.

Sautéed Shrimp and Grits (serves 4)

Ingredients:

6 slices bacon
½ cup chopped green pepper
1 cup sliced fresh mushrooms
1 clove garlic, minced
2 tbsp. All-purpose flour
½ cup chicken broth
2 tbsp. lemon juice
1 lb fresh shrimp, peeled
1 cup chopped green onions
¼ tsp. salt
2 tbsp. Simply Scrumptious Seasonings Gourmet BBQ Rub
Dash of Tabasco

For Grits:

2 cups half and half
¼ cup butter
½ cup uncooked grits
1 tsp salt
½ tsp white pepper
8 oz grated fresh parmesan cheese

Directions:

  1. Cook bacon until crisp. Drain, reserving the drippings in the skillet. Crumble bacon and set aside. Sauté green peppers, mushrooms, and garlic in the bacon drippings.
  2. Sprinkle flour over the vegetables, stirring for two minutes. Add the chicken broth and the rest of the ingredients. Cook 5 minutes. Keep warm.
  3. Grits: Bring the half and half and butter to boil, stir in the grits and return to a boil over medium heat. Reduce heat and continue to stir for 10 minutes. Add the parmesan cheese and if the grits are to dry add a little milk.
  4. Serve shrimp mixture over the grits and garnish with the crumbled bacon.
